Insta Friday {Last week of School}

Last week of school. At the beginning of the school year I was a little afraid of all the changes we had going on. It has been a great year and I couldn't ask for better teacher's for Kendall. Now, it's time for a little relaxation. No, practices or games, meetings we have to go to. Breakfast at 6:45 in the morning. For the first time I will savor these Summer day.

Insta Friday


This little pool had been my friend this week. At the Y they are doing a lazy mans triathlon. So I've been a fish this week. Good thing is my tan is awesome!

This is a terrible picture but it's the only one with almost everyone in it. These women are my co workers and some of the dearest friends I could ask for. We have all been through some tough situations and we huddle around each other and pray and on occasion go get a drink together. This week I said goodbye to them and my little MDO classroom that I have had for the last 3 years. As I get ready to set out on a new adventure.

Mother's Day {2012}


This little face is the best thing that has ever happened to me!

She insisted that we have a fancy breakfast. By fancy she means not making our plates off of the stove.

Make new friends but keep the old....

On Friday we had a much needed girls night out. I went with 2 of my dearest friends, Betty and I have been friends since 6th grade and Tracee and I work together and our kiddos are the same age.  It's funny how similar they are. We went to Floores Country Store  to go see Randy Roger's Band. Such a great night with great friends! 
I think I want to be a band groupie.

Spring is in the air....

We have been busy lately our days our  filled with school, work, games, programs, field trips and wrapping up all the end of school activities.The last day of school will be here before we know it. This first year of school has gone by so fast.

Lake LBJ

Ahh, Spring Break just a sneak peak of what our Summer will be like. My Aunt and Uncle have a  house on lake LBJ. All of the girls went up and had a fabulous time. Soaking in the sun, drinking a few adult beverages and solving  all of life's problems.

Corn Chowder

This weekend was one of those lazy weekends. You know the kind, that you wear your pajamas until 6 in the evening and you feel like you need to be a little productive so you take a shower and putting on some clean PJ's. In all my busyiness I fit in a little Pioneer Woman. She made Corn Chowder and then I decided I was going to make it. Best decision I made all weekend. I put in a little jalapeño for some kick.




4 Tablespoons 1/2 Stick Butter
1 whole Onion, Chopped
3 slices Bacon, Cut Into Pieces
3 whole Bell Peppers, Finely Diced (red, Yellow, Orange)
5 ears Corn, Kernels Sliced Off
1/4 cup All-purpose Flour
3 cups Chicken Stock Or Broth
2 cups Half-and-half
1 cup (heaping) Grated Monterey Jack
1 cup (heaping) Pepper Jack
1/3 cup Sliced Green Onions



Preparation Instructions
In a large pot, melt butter over medium-high heat. Cook onions for a couple of minutes. Add bacon and cook for another minute or so, then add diced bell peppers and cook for a couple of minutes. Finally, add corn and cook for a minute.
Sprinkle flour evenly over the top and stir to combine. Pour in broth and stir well. Allow this to thicken for 3 or 4 minutes, then reduce heat to low. Stir in half-and-half, then cover and allow to simmer/thicken for 15 minutes or so.
Stir in cheeses and green onions. When cheese is melted and the soup is hot, check seasonings. Add salt and pepper as needed.
