Pulled Pork Tacos

This is such a fast recipe! All you do is put all the ingredients in the crock pot. How hard is that?

Pulled Pork Tacos
  • pork shoulder
  • 1 can coke
  • 1 packet of taco seasoning
  • tortilla's
  • the toppings of your choice

Get your crock pot out put the pork, whole can of coke and 1/2 the packet of taco seasoning in set it to low for about 6 hours or so. Let pork rest then shred it. Heat up the torts, we put sour cream, cheese and hot sauce on our taco's. And that is it!!

Birthday Paint Bucket



I wish I could take credit for this cute idea but I can't. We went to a our little friend Ava's birthday party yesterday and I made this little bucket and stuffed it with things a 2 year old girl would love. When Ken had her b-day her friend Kayleigh gave her a little paint bucket, that's is where I got the idea from. All you do is get a paint can from Home Depot and put scrapbook paper on it a you've got a cute little bucket to fill with anything you want!

Gymnastics

Every Tuesday we go to Gymanastics, as Kendie says. She flips, jumps and most importantly get a lot of energy out! By the time we get home eat lunch this kid is pooped!! Here are a few pictures and videos of her yesterday. In May they have a "Mini Olympics" were the kids do a routine and get a medal. I'll be sure to take lots of pictures for that.

Easter and Zoo Pictures

I hope everyone had a great Easter, we sure did! It was a very busy day as any holiday is with our family. First we went to my parents house were my Dad makes all the girls a "Easter Nest". It's so funny to see him with ALL these girls. We haven't had a lot of rain here so he went all the way to Molton ( Curtis, our neighbor has a ranch there) to get his grass and wild flowers for the nest. The girls hunted eggs and opened some Christmas I mean Easter presents :). Then off to the Goebel's were it is always fun and exciting with wild little Goebel kids running around hunting eggs and Kendie right in the middle of it all. Oh did I mention that I found the golden egg. Sorry Shanna there is always next year, I will have fun spending my $6!







Last Friday Shanna and I loaded up the kids and went to the Zoo. We must have not taken our medication when we made that decision, it was awful for us but lots of fun for the kids. It was really crowded being that it was Good Friday and the last day of Spring Break but we survived!

Tres Leche Cake


I made this cake for Easter. It is so cool and refreshing, perfect for a Summer party.






Tres Leche Cake



  • yellow cake mix

  • 1 can sweeten condensed milk

  • 1 cup whole milk

  • 1 cup evaporated milk

  • cool-whip

  • strawberries


Make the cake mix according to the mix directions. Cool for 10 minutes.

While the cake is cooling whisk together the condensed milk, evaporated milk and whole milk.


Take a wooden spoon handle and poke holes in the cake as many as you can. Pour the milk mixture all over the cake and refrigerate for 2 hours. I usually do this the night before and let it sit in the refrigerator all night.


Frost with cool-whip and fresh strawberries. That's it!

Early Easter Fun

We have had a lot of fun the last couple of days. On Thursday, my mom had her annual Easter Egg Hunt. I usually hide the eggs while everyone else is playing in the back. Kendie and Reagan are the perfect age that they find an egg and see that there is candy in it and they are done with the hunting for a while! We also had a little friendly competition, my mom got some cookies and the KIDS could decorate them. My sister and I thought we would make some too. As we pushed the kids out of the way so we could get to the pink and yellow icing first, we worked our cookie decorating magic. Oh, there is nothing better for the self- esteem until you've beat a bunch of 2,4 and 7 year olds at a cookie decorating contest.

Early Easter Fun

My Little Singer

Kendie loves to sing! She will be in the back seat singing her little heart out to songs a 2 year old probably should not be singing ( Sugarland's song Stay) not that I listen to fowl mouth rappers but letting your little girl sing songs about a woman beggin' her man to stay. I'm pretty sure that I'm out of the running for Mother of the Year award...darn it! Maybe the Easter Bunny will bring her a Laurie Berkner CD that's a little more appropriate. Here is a little sample of her beautiful voice.

Southwest Chicken Mac and Cheese

Let me start off by saying if you need to feed an army this is the dish for you! This makes so much it is perfect for a party. You can make this ahead and bake it off when you need it. Hope you like this one.

Southwest Chicken Mac and Cheese


1 pound dry elbow pasta noodles

2 tablespoons extra-virgin olive oil

1/2 cup finely chopped white onion

1/4 cup finely chopped red bell pepper

1 tablespoon finely chopped jalapeno

2 cups cooked shredded chicken breast

3 tablespoons finely chopped cilantro

1/2 teaspoon salt

1/2 teaspoon ground cumin

1/4 teaspoon ground black pepper

1 (14-ounce) can rotel




1/2 cup butter (1 stick)

1/2 cup flour

1 teaspoon salt

1/4 teaspoon freshly ground black pepper

5 cups milk

2 cups shredded medium Cheddar

2 cups shredded Monterey Jack

1/2 cup cream cheese, softened

2 tablespoons butter, melted

1 cup plain bread crumbs


Fill a large pot with water and bring to a boil. Add dry elbow pasta to boiling water and cook for about 10 minutes or until al dente, drain and reserve.
Preheat oven to 350 degrees F.
Heat olive oil in a large nonstick skillet over medium high heat. Add onion, bell pepper and jalapeno. Saute for 4 to 5 minutes or until tender. Add chicken, cilantro, salt, cumin, rotel; saute for 3 to 4 more minutes, remove from heat and set aside.

In a separate large pot over medium heat, melt butter. Remove from heat and whisk in flour, salt and pepper until smooth. Place back on medium-high heat, slowly whisk in milk and bring to a boil while continuously whisking. Reduce heat and stir in Cheddar, Monterey Jack and cream cheese until melted and smooth. Stir in cooked elbow noodles and chicken mixture. Pour mac and cheese mixture into a greased 3 quart casserole dish. In a medium bowl, combine the melted butter and bread crumbs. Toss to coat and sprinkle crumbs over top of mac and cheese. Bake for 20 to 25 minutes or until cheese is bubbly and crumbs browned. Enjoy!

Happy Birthday to Me!
















In honor of my 27th birthday I thought I would have 27 interesting facts about me. Some of you know these, some don't. It was fun and kind of hard to think of things that happened years ago. Here we go!

1) I am extremely scared of heights. J and I went to the Royal Gorge on our honeymoon and I just sat on the side as he walked to the other side and rode the cable car across. Thankfully he video taped it all as J said, "That's the best $30 I ever spent". Sorry babe.

2) I actually like to organize stuff.

3) My favorite holiday is Christmas.

4) I have always dreamed of having my own line of jewelry, bags and kids clothes.

5) I'm left handed.

6) I wanted to be a interior designer when I grew up. I was always painting something when I was a kid. Did you see the picture above? The yellow hearts on the comforter go perfectly with the yellow walls!



7) I was 23 when J and I got married. I was 24 when Ken was born.

8)I have worked at a daycare, nail salon and as a massage therapists.

9) I love Mint Chocolate Ice Cream AKA Green Ice Creams.

10) I'm starting our own garden.

11) I still watch Real World/Road Road Challenges. I can't believe I just typed that!

12) I love to sing even though I sound horrible.

13) Jeff and I were married exactly 11 months when I found out I was pregnant with Kendie.

14) When I was in the 4th grade talent show I danced to Straight Up by Paula Abdul. Man that was a killer routine!

15) I have 4 nieces and 5 nephews.

16) In the morning I REALLY look forward to coffee.

17) When I was in high school I was grounded for 3 months!!

18) Twins run in both our families ( is that a good thing?)

19) In 1997 I was #1 in the state with my Brahman steer.

20) I love Colorado, we want a cabin there someday.

21) When J took me on our first date we went to Far West Rodeo...Classy.

22) I just started a jewelry business, Ruffles and Rhinestones.

23) We have gingerbread house parties every Christmas but usually it's just Karagen and me everyone else is making fun. They are just jealous of are artistic talents.

24) I have shown Steers, Sheep and Pigs. But I always wanted to show Rabbits!

25) In high school my car was known as "The Boat" and I would wait to start it when everyone was gone ( it was so loud)

26) I have a picture with Luke Perry and Stephen Baldwin

27) Last but not least have to greatest little family and love you all!!

Potty Training

Well it's been 3 solid weeks of NO diaper changing and I love it!! I don't want to jinx it but we might be out of diapers for good. Of course I just bought a big box about 4 weeks ago so Reagan looks like your getting a bunch of diapers. The other day we were putting on her undies and they have Ariel from The Little Mermaid on them and I said, "Whose on your undies?" Kend said, "Oh that's Audrey". Audrey is our niece who has red hair! I laughed and laughed, she is so funny so from now on those are her "Audrey undies".

Beef Tacos

Some of you know about my new obsession with the new cook-book Deceptively Delicious. My sister calls me a freak but I really love it!! I think I really should get some compensation because I have been selling the heck out of this book to all my friends with and without kids!



Tacos


  • Nonstick cooking spray
  • 1 Tablespoon olive oil
  • 1 lb lean ground beef of turkey
  • 1 (14oz) can crushed tomatoes
  • 1/2 packet taco seasoning with no MSG
  • 1/2 cup carrot puree ( cut up carrots, steam for 8 to 10 min. and puree them in processor)
  • taco shells
  • 1/2 cup shredded cheddar cheese

Coat large nonstick pan with cooking spray and set over medium heat. When skillet it hot add oil and meat and brown for 4 to 5 minutes.

Stir in tomatoes and their juices, carrot puree and seasoning mix. Reduce the heat to low and simmer until meat is no longer pink and the mixture begins to thicken, 10 to 15 minutes longer.

Heat up taco shells according to package. Fill the shells with meat mixture and add cheese and enjoy!

HAPPY BIRTHDAY KARAGEN!!








Today is Karagen's birthday, I can't believe she is 7 already! I remember we (as in my whole family Aunts, Uncles, Cousins I don't think their was a chair left in the waiting room) couldn't wait for you to get here we spent all day...and night at the hospital but it was worth the wait. Happy Birthday Kara, We love you!
