Favorite Friday


This book is hilarious! At first I thought it was going to be very serious and have a bunch of tips on how to be a better mother. Some moms tell their stories of the trials and tribulations of motherhood. I think some of us take being a mother so serious and we worry about what everyone else thinks ( I am guilty of this sometimes) and if our kids aren't going to get into medical school because we let them watch Dora for an hour while we looked stuff up on the computer. Anyways, If you need a good laugh go get it today!!

Marathon, that's right A Marathon!


So my friend Heather asked me if I wanted to do this Beach to Bay marathon with her next May. A MARATHON PEOPLE!! Have you seen me lately??? I'm not sure if I'm a good candidate for this because my first 2 questions were How far is it? and Can I walk? But I started thinking this could be really good for me. I WAS athletic and I exercised daily( I always got 1st place in the mile run for the presidential fitness test in elementary school):O). But now my title as a wife and mom has given me an excuse to NOT DO ANYTHING good for myself!! So I am thinking about it and I think I will get started. I mean I have a whole year to get ready for this. I might just do it!! I will let you know what's gonna happen!!

Summer Time Fun!!

I hope everyone enjoyed the 3 day weekend! On Sunday we had our friends and their kids over, 8 kids a little pool and no accidents...that's impressive! I think everyone really had a good time. Then on Monday we went to our friends house and went swimming. Kendie even jumped off the diving board, I don't have any pictures of that my mother would have a heart attack!

Sleeping Beauty

Yesterday we had a very fun day! It was the last day of gymnastics, we went to eat at Chick-fil-A to celebrate the last day of gymnastics oh I mean have lunch, then we went swimming. When we came home I was cleaning up and I noticed that Ken was very quite. I went in the living room and found her like this...




I guess I need to limit her social calendar... she needs her beauty sleep.

Vegetarian Reuben's with Russian Dressing

My sister-in-law made this sandwich and it is so delicious. I'm not a big fan of sauerkraut so I usually leave it out but this is one good sami!



Vegetarian Reuben's with Russian Dressing



Russian dressing
2 tablespoons reduced-fat mayonnaise
2 teaspoons ketchup
2 teaspoons chopped capers
1 teaspoon chopped pickle or relish

Sandwiches
3 teaspoons extra-virgin olive oil, divided
1 small red onion,
thinly sliced1 cup sliced mushrooms
5 cups baby spinach
Freshly ground pepper to taste
4 slices rye bread
1/2 cup shredded reduced-fat Swiss cheese, such as Jarlsberg Lite or Alpine Lace
(2 ounces)1/2 cup sauerkraut

1. Prepare Russian dressing: Whisk mayonnaise and ketchup in a small bowl until smooth. Stir in capers and pickle (or relish).2. To prepare sandwiches: Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat. Add onion and mushrooms; cook, stirring often, until the onion is softened, 4 minutes. Add spinach and cook, stirring, until it has wilted, 1 to 2 minutes. Transfer the mixture to a plate.3. Coat the pan with the remaining 1 teaspoon oil and return to medium heat. Add the bread; divide cheese equally among the slices. Divide sauerkraut between 2 slices and divide the spinach mixture between the other 2 slices; cook until the cheese has melted and the bread is golden brown, 4 to 6 minutes. Transfer sandwich halves to a cutting board. Divide the dressing between the spinach halves. Carefully place the sauerkraut halves on top. Cut sandwiches in half and serve.

Gymnastics


Yesterday we had Ken's "Baby Olympics". Man by the time we left there I could have used some heavy duty anxiety medication. It was CRAZY, kids running around parents chasing after their wild little indian's. I managed to get some cute pictures even though she was being a little stinker. Kendie had a good time and that is what is important! Even though her mother was sweating to death from chasing her from one end of J & R to the other and so embarrassed by her sweet little girls behavior but whatever, she's 2. Will I still be saying that when she is 12?

Happy Birthday Reagan








Our sweet little Ray-Girl is 2 today. She is my sister's youngest little girl. When she was a baby we all thought she was going to be just like her Daddy...the silent type. But now we found out she LOOKS like her Daddy but ACTS just like her Momma! She is one of those kids that has a funny personality and I'm not just saying that because she is my niece. Happy Birthday Reagie Paige!!

Strawberry Cake

I have decided to move Recipe Monday to Yummy Tummy Tuesday. I found that I always wanted to post stuff that happened over the weekend on Monday's and I couldn't because of Recipe Monday and plus I thought of this super cute name instead of boring Recipe Monday... so lame!

My Mom made this cake for Mother's Day it was so good and berry sweet ( sorry, I couldn't resist we're into Strawberry Shortcake these days)


Strawberry Cake

1 BOX WHITE CAKE MIX
1 (3OZ.) BOX STRAWBERRY GELATIN
1 (10 OZ.) PACKAGE FROZEN STRAWBERRIES IN SYRUP, THAWED AND PUREED
4 EGGS
1/2 CUP VEGETABLE OIL
1/4 CUP WATER

MIX AND POUR INTO PREPARED PANS, AND BAKE FOR 20 MINUTES.
LET COOK FOR 10 MINUTES AND REMOVE FROM PANS
COOL COMPLETELY BEFORE SPREADING FROSTING

STRAWBERRY CREAM CHEESE FROSTING

1/4 CUP BUTTER SOFTENED
1 (8-OZ.) PACKAGE CREAM CHEESE, SOFTENED
1/4 CUP STRAWBERRIES (PUREED)
7 CUPS CONFECTIONERS' SUGAR
1/2 TEASPOON STRAWBERRY EXTRACT (OPTIONAL)
SPREAD ON CAKE
YOU MAY WANT TO ADD STRAWBERRIES FOR GARNISH

Thank God for Mother's Day :)


Well I hope all you Mommas out there had a great day yesterday. I have to brag on the gift my cute husband gave me. It is a coffee maker, yesterday I realized that I am officially an adult not only am I celebrating Mother's Day, I asked for a coffee maker! This is not your ordinary coffee maker this thing has all sorts of features. It has a built in filter for your water, a special cleaning cycle, you can make your coffee stronger if you like and it tells you how long your coffee has been brewed. This thing is awesome so if your in the market for a new coffee maker this one is great!

Mother's Day Craft

O.K. I know this doesn't give you a lot of time to make this but it is so easy to make. Yesterday I invited some friends over to make these tiles with pictures on it. All you do is take a tile (Home Depot 14 cents), your favorite pictures and some decoupage. Place the picture where you want it than paint a thin layer of decoupage (we used the gloss finish)than put some ribbon or any scarpbooking embellishments you want. We used the instant decoupage and it dried fast but not to fast. We had a great time doing this little craft project, hope you do too!

Favorite Friday

I'm going to sharing one of my favorite things each Friday. Mostly just to make sure I keep up on posting. I don't want our blog to get TOO boring. Today is a great day to start this because I feel I have a very blog worthy thing to post about.

Today I will share one of my favorite things, it is not a great cookbook or a amazing cleaning product though there will be some in the future it is simply just being with my friends. Today was a very special day. This morning I had my "new friends" over when we get together it is like I have known them forever. Then this afternoon I had one of my "oldest friends" over, Betty. We have been friends since the 6th grade. She moved to Washington D.C. a while ago. It is so fun when we get together talking about old times and how our kids will NOT act like we did when we where in school, who got married lately and who we saw last. Anyways, not every Friday will be so touching like this one. I just thought I would let you know that I heart my friends! :)
P.S. I was going to put some pictures of us in high school but she would kill me!!

College Station

We went to College Station this weekend for a family reunion for my DH side of the fam. It is on a beautiful ranch, they have a pool for the kids but it was about 70 degrees so no swimming for Ken. This year it was a German theme so the men put on their Lederhosen (I told you all this German attire comes in handy) and cooked some sausage for everyone. After the reunion our Aunt and Uncle let us stay the night with them. Where something VERY embarrassing happened to me and I seriously thought about posting about it but decided I should keep that to myself...I don't know who all reads this!




On Sunday we got up and drove around College Station. On campus they have a beautiful little garden, basically showing you ways you can have a small garden at your home and how to make compost and to catch rain to water your garden with. Of course being married to a Goebel we have all this for our small garden which is doing really good. It is really a neat place to take kids they have all sorts of interactive things for them to do. It is also a great place to take pictures which my sweet little baby wanted no part of.

Chicken Empanadas

This is a good recipe to have if you have some left overs. Sometimes I use a rotisserie chicken if I think about it while I'm at the store. Oh ya and it comes together super fast!!


Chicken Empanadas


3 cups chopped, cooked chicken
1 (8-ounce) package shredded Colby and Monterrey Jack cheese
4 ounces cream cheese, softened
1/4 cup chopped red bell pepper
1 jalapeno, seeded and chopped
1 tablespoon ground cumin
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 (15-ounce) package refrigerated pie crusts
Water (for sealing the edges of the crust)


Preheat oven to 400 degrees F.


Lightly grease a baking sheet. In a large bowl, combine the chicken and next 7 ingredients. Unroll 1 pie crust onto a lightly floured surface. Roll into a 15-inch circle. Cut out rounds, using a 3-inch cookie cutter. Re-roll dough as needed. Repeat procedure with remaining pie crusts, making 12 to 15 circles total. Arrange 1 round on a clean, flat surface. Lightly brush the edges of crust with water. Place 1 heaping teaspoon of chicken mixture in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal. Repeat with the remaining rounds and chicken mixture. (Up to this point, the recipe can be made ahead and frozen for up to 1 month). Arrange empanadas on the prepared baking sheet. Bake for 15 minutes.
