Baby K

Congratulations to our friends Shelley and her husband, they had a little girl yesterday. Kingsley was born on Thursday around 5:15. We are going to the hospital tonight to see baby K. I can't wait to see her!!

Anyone know a good cleaning lady??


My cleaning lady sucks. Seriously? Every week I find myself walking around the house wondering what I pay her for.She doesn't do commodes or dusting or floors or vacuuming! She avoids laundry and mopping and windows. She certainly doesn't change sheets or take out the trash.

Oh man, I forgot. I don't have a cleaning lady.

It's all me, folks. :0)

Slider Hamburgers

Slider Hamburgers

I make these all the time. They are super easy and fast. For the rolls, I get the potato rolls in the bakery section of the grocery store.



1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1 pound ground chuck
8 (3-inch) buns or rolls, split in half


Preheat the oven to 250 degrees F.

Preheat a griddle to 350 degrees F. ( I usually grill them outside)


Combine the onion powder, garlic powder, pepper, and salt in a small bowl. Set aside.
Line a jellyroll or sheet pan with parchment paper, and place the ground chuck in the middle of the pan. Cover the meat with a large sheet of plastic wrap.

Roll meat with a rolling pin until it covers the surface of the pan; it should be very thin. Remove the plastic wrap, and sprinkle the meat with the seasoning mixture. Fold the meat in half, from side to side, using the parchment paper. Use a pizza wheel to cut the meat into 8 even squares.
Wrap the buns in foil and place in the oven for 5 to 10 minutes. Meanwhile, place the burgers on the griddle and cook for 2 to 3 minutes per side.

Remove the buns from the oven. Put on your favorite condiments and serve immediately.

Gooey Butter Cake

I LOVE this cake! There are tons of variations so I went ahead a put them all on here. My favorite is the chocolate cake with chocolate chips and the pumpkin cake around Thanksgiving...YUMMY!!


Cake

1 (18.25-ounce) box yellow cake mix

1 egg

1/2 cup (1 stick) butter, melted


Filling

1 (8-ounce) package cream cheese, softened

2 eggs

1 teaspoon pure vanilla extract

1 (16-ounce) box confectioners' sugar

1/2 cup (1 stick) butter, melted


Preheat oven to 350 degrees.

Lightly grease a 13x9x2-inch baking pan.
In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside.

Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce speed of mixer and slowly pour in butter. Mix well.
Pour filling onto cake mixture and spread evenly. Bake for 40 to 50 minutes. Don't be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point!


Remove from oven and allow to cool completely. Cut into squares. Just remember that these wonderful little cakes are very, very rich, and a little will go a long way-even for piggies like me!

Pumpkin Gooey: This variation is great for the Holidays especially around Thanksgiving. For the cake part, I sometimes use a spice cake mix. I have even used a chocolate cake mix, but I think my favorite is the basic yellow cake mix. Follow the original recipe, adding a 15-ounce can of pumpkin pie filling and an extra egg to the cream cheese filling. Bake as usual, remove from oven, and allow to cool. Cut into squares and top each square with a pecan half. Serve with a dollop of fresh whipped cream. I promise you'll never want pumpkin pie again!

Pineapple Gooey: Add a 20-ounce can of drained crushed pineapple and an extra egg to the cream cheese filling. Proceed as directed above.

Lemon Gooey: Use a lemon cake mix in place of the yellow cake. Add the juice (approximately 1/4 cup) and zest of 2 lemons to the cream cheese filling. Proceed: as directed above.

Carrot Cake Gooey: Use a spice cake mix, and add 1 cup chopped nuts and 1 1/2 cup finely grated carrots to the cream cheese filling. Proceed as directed above.

Peanut Butter Gooey: Use a chocolate cake mix. Add 1 cup creamy peanut butter and an extra egg to cream cheese filling. You can sprinkle the top of batter with 1 cup chopped peanuts if you like. Proceed as directed above.

Chocolate Chip Gooey: Use either yellow or chocolate cake mix. Sprinkle 1 cup chocolate chips and 1 cup chopped nuts on top of filling. Proceed as directed above.

Banana Gooey: Use a yellow cake mix. Prepare cream cheese filling as directed, beating in 2 ripe bananas and an extra egg. Proceed as directed above.

Nutty Gooey: Use a yellow cake mix, and add 1 cup chopped nuts to the cake mixture. Proceed as directed above.

Chippy Gooey: Stir 1 cup white chocolate chips, peanut butter chocolate chips, butterscotch morsels, Heath Almond Toffee Bits or Heath Milk Chocolate Toffee Bits into filling. Proceed as directed above.

Sunday night...

It's Sunday night and that usually means I'm gearin myself up for a great week of working out and eating healthy! This usually fizzles out about Wednesday night, Thursday morning and than I say screw it...LET'S EAT!! For all you skinny gals this doesn't mean anything to you, but you girls with junk in your trunk you know what I'm talkin about! :) I have thought about doing this a while ago but my husband said I shouldn't ( he knows my failure rate so well :)) I think monthly I will keep you posted on how well I'm exercising and most importantly eating!! If this doesn't motivate me, I don't know what will! :) Wish me luck!! Maybe in a couple months I will look like this....
PS They are kickin butt at the Olympics!

Favorite Friday




Chances are good if you don't know someone personally who's a Arbonne Consultant, than your best friends sister-in-law's, sister is! It seems like everyone sells this great stuff (my sister does, so if you need some just ask:)). This is the face wash I use, I also have the moisturizer. This stuff is a little expensive but it last forever!! I have had my face wash and moisturizer since last Fall...and I wash my face twice a day. I see a huge difference, my skin looks clearer and feels smoother. Next I am going to get the enzyme peel.

Oh, Jelly Fish we will miss you. You were are family fish for so long....26 hours to be exact!

Photoshop

I am really getting into this photoshop thing! I was reading this blog and she is doing a lot of digital scrapbooking so I emailed her, asked a few questions. She said try photoshop elements, you can download it for free for 30 days!! There are lots of sites you can get free scrapbooking kits from. Shabby Princess has really cute kits...thanks Kellie for recommending that!



I have not mastered the whole scrapbook/blog layout thing yet but I'm working on that!! But I have gotten into the photo editing part. I worked for a photographer in high school and I really like to take pictures. I'm the one in the group that always has my camera no matter what we do. I have started to figure out how photshop works...well, sort of. Here are some pictures that I have done.


It's really fun! I am definitely going to get it after my 30 days is up!









PS If you can't tell, I'm a HUGE fan of black and whites!

My brother in laws cousin's family had a terrible accident the other day. They were swimming at the lake and the little 2 year old boy wondered off unnoticed by anyone. This was around 7pm Mon. evening. around 7:20ish his mother found his little body on the other side of the camping area about 4 feet out in the water face down. Here is a link to the families blog with more information. Our prayers are with the family as they go through this rough time. From reading some emails that my sister in law has sent out they have a strong relationship with God and their faith in him will help them through this tough time. Please pray for them.

Happy Birthday Babe





Today my cute little husband is 32. I love J and am grateful for the wonderful husband and father he is. He's so giving and loving and fabulous and incredible...he's just so great and I'm so thankful that we are married. I hope it's a great day for you babe!

Baby it's HOT outside!

The other day K was playing in her room so good and quite and that got me thinking. Umm what could the little darling be up too...




She insisted leaving the hat and gloves on all afternoon. Did somebody tell this kid that it's 101 degrees outside? I don't know about you but I am SO ready for Fall...chubby girls don't do good in the heat!

Crispy Southwest Chicken Wontons

I found this in my recipe notebook... yes, I have a notebook that I made with all kinds of recipes in it. These are fun for a party!! Which J is turning 32 on Saturday and we are having a party so I might make these.

Crispy Southwest Chicken Wontons

2 Tablespoons canola or vegetable oil
½ Cup finely diced white onions
½ Cup finely diced red bell pepper
2 large cloves fresh garlic, minced
1 12 oz can chunk chicken, drained (from Costco)
¼ Cup packed fresh cilantro leaves, finely chopped
¼ Cup Verde Salsa (I use Herdez brand)
2 Tablespoons prepared ranch dressing
½ package wonton wrappers (I used the brand Nasoya, found in produce section of grocery store)
1 egg white whisked with 2 Tablespoons water

1. Heat oil into a large skillet over medium heat. Saute onions and bell pepper for 5 minutes or until softened. Stir in garlic for 1 minute and remove from heat.

2. In large bowl add onion mixture, chicken, cilantro, salsa, ranch, salt and pepper. Mix until well combined.

3. Place 1 Tablespoon chicken mixture in center of wonton wrapper. Brush bottom edge with egg white wash, fold over filling and press edges together firmly, forming a triangle shape.

4. 2 options of cooking. 1st is place about 1 inch of canola or vegetable oil in a medium skillet over medium high heat. When hot, place 4 wontons at a time into oil. Cook 1-2 minutes per side or until golden brown. 2nd option is place wontons on a baking sheet; bake at 375 degrees F for 15-20 minutes or until crispy, flipping once half way through cooking.

5. Serve with Ranch dressing or salsa if desired.

Jumping Jym

Today we went to a inflatable playground or a room with a bunch of blow up castles in it. I wish I had thought of that! The kids had a great time jumping and jumping and jumping. Something is going on with K maybe a growth spurt? She is always hungry (she has never been a big eater...where did she get that from?) and is a bit grouchy( I know where she got that from) so the first hour we had to get all that out of the way but by the second hour she was on fire!


Here comes Ken!! And yes, she did slide into me.
