Winter Loves

I can't help but think Winter is over here in Texas. Our AC has been running all day. We have already played in the sprinkler the other day. So Winter's over in my book. Here are my loves...



The first REALLY cold day of the year.

Going out to Jeff's parents house on Sundays. Where they have a nice big roaring fire.

Waking up in the morning a putting on my nice fleece robe and drinking a good cup of coffee.

All the Christmas festivities.

Always dreaming of living in Colorado but by January I think I really like living in NB.

Having soup for dinner.

Getting my monogramming machine:)

Going out to my sister's on Friday's and stopping by Naegelin's and getting a cappuccino and some doughnuts... cappuccino for me and doughnuts FOR THE KIDS!:)

Valentine's Day, we usually don't do anything big but this year we started some new traditions.

As you can see I'm not a real big fan of Winter. Once New Year's is over let's bring on Spring! Hopefully my Spring Loves will be more interesting!

Orange Julius

I love Orange Julius! When we were young I can remember coming in after playing in the hot Summer sun to a nice big sweet glass of Orange Julius and watching The Bold and the Beautiful( my Mom's soap opera of choice). The weather man said it's almost going to be 90 degrees on Friday. Better get my blender out!:)


6 oz. frozen orange juice concentrate
1 cup milk
1 cup water
1/2 cup sugar
1 tsp. vanilla extract
8-9 ice cubes

1. Combine all ingredients except ice cubes in blender.
2. Blend for about 1-2 minutes, adding ice cubes one at a time.

Gyro Sandwich

We went to the rodeo last night, we had one of those Greek sandwiches called a Gyro. I love those things!I love that pita bread! Not a huge fan of the cucumber sauce they put on it so I left it off this time.


Souvlaki Marinade:

3/4 cup balsamic vinaigrette
3 tablespoons lemon juice
1 tablespoon dried oregano
1/2 teaspoon freshly ground black pepper

4 skinless, boneless chicken breast halves

Tzatziki Sauce (cucumber sauce):

1/2 cup seeded, shredded cucumber
1 teaspoon kosher salt
1 cup plain yogurt
1/4 cup sour cream
1 tablespoon lemon juice
1/2 tablespoon rice vinegar
1 teaspoon olive oil
1 clove garlic, minced
1 tablespoon chopped fresh dill
1/2 teaspoon Greek seasoning
kosher salt to taste
freshly ground black pepper to taste

4 large pita bread rounds
1 heart of romaine lettuce, cut into 1/4 inch slices
1 red onion, thinly sliced
1 tomato, halved and sliced
1/2 cup kalamata olives
1/2 cup pepperoncini
1 cup crumbled feta cheese



In a small bowl, mix the balsamic vinaigrette, juice from 1/2 lemon, oregano, and 1/2 teaspoon black pepper. Place chicken in a large resealable plastic bag.

Pour marinade over the chicken, seal, and refrigerate for at least 1 hour.
Preheat an outdoor grill for high heat.


Toss the shredded cucumber with 1 teaspoon kosher salt, and allow to sit at least 5 minutes. In a medium bowl, mix the yogurt, sour cream, 1 tablespoon lemon juice, rice vinegar, and olive oil. Season with garlic, fresh dill, and Greek seasoning. Squeeze the cucumber to remove any excess water; stir into sauce. Season to taste with kosher salt and pepper. Refrigerate until ready to use.

Remove chicken from marinade and place on prepared grill. Discard remaining marinade. Cook chicken until juices run clear, about 8 minutes on each side. Remove chicken from heat, and allow to sit about 10 minutes before slicing into thin strips.

Place pita rounds on the grill, and cook for about 2 minutes, until warm, turning frequently to avoid burning. Arrange warmed pita, sliced chicken, lettuce, onion, tomato, olives, and pepperoncini on a serving platter. Serve tzatziki sauce and feta cheese in separate bowls on the side. Stuff pita pockets with chicken and toppings to serve.

Favorite Friday

One of my favorite things in this world is pictures. I love looking at pictures. The other day we had a Valentine's photo shoot. My friend, Jodie took these pictures. Now, she is not just some lady who picked up a camera yesterday. This is her business and boy is she good at it! She did a excellent job first of all wrangling this wild Goebel child and did a even better job at capturing her personality!

Oh, it's a beauitful day....

Just after lunch I found a big package by my front door. Oh, could it be? YES it is!!

I couldn't open that box fast enough! Sorry Ken, I may have knocked you down in the shuffle.:)

Now let's see how many things I can monogram between now and 2:30 when we leave to meet up with our friends at the church playground??

Sweetheart Cookies


I found this recipe at Kraft Foods



1 pkg. (20 oz.) refrigerated sugar cookies 12
JET-PUFFED Marshmallows
decorating icing


PREHEAT oven to 350°F. Roll out cookie dough to 1/8-inch thickness on lightly floured surface. Cut into 24 cookies, using 2- to 3-inch heart-shaped cookie cutters, rerolling dough scraps as necessary. Place, 2 inches apart, on ungreased baking sheets.

BAKE 7 to 9 minutes or until lightly browned. Cool 1 minute; remove from baking sheets to wire racks. Cool completely.

TOP bottom side of each of 12 of the cookies with 1 marshmallow. Place 4 of the cookies on microwavable plate. Microwave on HIGH 15 to 20 seconds or until marshmallows begin to puff; cover with 4 of the remaining cookies, bottom sides down, to make sandwiches. Repeat with remaining cookies and marshmallows. Decorate with icing as desired.

Valentine's Day Slacker



I don't know about you but we don't really go all out for Valentine's Day around here. To be honest, I have never put up decorations for Valentine's Day, ever!


I'm reading all these blogs with such cute Valentine's Day decorations and traditions. I kind of feel like a slacker mom. So I felt like I should run over to Target and getting some decorations. Tip Junkie has some really cute and easy ideas for gifts. Than last night I found this cute blog. Oh, I could have looked at her cute ideas ALL night long!

The other day we watched a DVRed (is that a word?) Jon and Kate plus 8 and she had a darn scavenger hunt for her kids! WOW, my poor baby has been missing out!

25 Random Things...

Everyone on Facebook has done these list and I saw Sippy Cups did this so I decided to be a copy cat.


1. I love to do yard work.

2. If Jeff and I have a boy next we will name him either Kase Wiley or Kash William. Those just sound like rough little boys.:)

3. I really want a Honda Odyssey(never thought I'd want a minivan) but we are probably going to get a 4 Runner.

4. Every time I take a piece of bread out I have to bite a tiny corner off (only on my bread though).

5. My Brother In Law has seen me completely naked! ( I think he lost his vision shortly after that) Bathroom, Crowed house, lots of kids running around, complete accident. If you want to here the whole story email me.

6. I have to have at least one cup of coffee in the morning. Before I start my day.

7. I always wanted to be a "Homeroom Mom". Do they still call them that?

8. It is 10:28 pm and I haven't showered or gotten out of my PJ's yet. But I will as soon as I'm finished with this.

9. Did I mention if I don't have anywhere to go first thing in the morning it takes me a long time to get going?

10.When I was 4 my sister told me that someone was buried underneath our front steps.

11. I love Real Housewives of OC.

12. I LOVE cereal! When I was younger I would eat it at every meal...maybe that is why I was so skinny?

13. Kendall is a mix of Jeff and Me. Looks like me, acts like Jeff!

14. When I was in High school I drove a Crown Victoria aka The Boat. That car can fit a bunch of people in it!:)

15. About half of our food in our frig is organic.

16. I like office supplies. I don't know why but I've always liked pens, note pads, highlighters. I'm just werid like that.

17. I think being a good wife and a good mother is most important thing I will ever do.

18. I love watching those survival shows especially Man vs Wild. Bear eats some nasty stuff but I think he is cute.

19. If we have another girl her name will be Brilee Erin.

20. Every time I look at my BIL I can't help but laugh a little and think he has seen my goods!

21. On our honeymoon, Jeff and I were stuck in the house for 4 days because of a snow storm in Colorado. We melted snow so we could drink it. Not because we were running out of water. It just gave us something to do.

22. When we first got married Jeff and I wanted to move to Colorado.

23. I love Barefoot Contessa.

24. I worry a lot. Jeff doesn't worry at all!

25. I love my husband more now than I did when we first got married. I think being a Daddy has a lot to do with that.:)
