Chocolate Sheet Cake

I don't know if I've told you about this recipe blog I go to quite often. Mommy What's for Dinner? I found this recipe and it just looked so good. It's the Pioneer Woman's recipe which I just found her blog a couple of weeks ago and I've become well kind of a stalker.;) I love looking at what she is doing to her house.

Pioneer Woman
Chocolate Sheet Cake

Combine in a mixing bowl:
2 cups flour
2 cups sugar
1/4 teaspoon salt

In a saucepan, melt:
2 sticks butter
Add 4 heaping tablespoons cocoa. Stir together.
Add 1 cup boiling water,
allow mixture to boil for 30 seconds, then turn off heat.
Pour over flour mixture, and stir lightly to cool.
In measuring cup,
pour 1/2 cup buttermilk.
Add:2 beaten eggs
1 teaspoon baking soda
1 teaspoon vanilla
Stir buttermilk mixture into butter/chocolate mixture.
Pour into sheet cake pan and bake at 350-degrees for 20 minutes.

While cake is baking, make icing:
Chop 1/2 cup pecans finely.
Melt 1 3/4 sticks butter in a saucepan.
Add 4 heaping tablespoons cocoa, stir to combine, then turn off heat.
Add:6 tablespoons milk
1 teaspoon vanilla
1 lb minus 1/2 cup powdered sugar
Stir together. Add pecans, stir together, and pour over warm cake.

Spring Break

Everyone is on Spring Break this week around here. I'm a little jealous because my sister and her family have taken a awesome trip to Dallas this week. So while they are going to the American Girl store and staying at the Great Wolf Lodge this is what I did today...



I made a Easter wreath! Do I know how to have fun on Spring Break or what?:)

Favorite Friday

Road Trips

Today we went on a road trip or girl trip(2 other friends went with us) as Kendie called it. We went to visit our friend who moved away a month ago. Why does driving a long distance just wear you out? I'm pooped tonight! We had such a nice day and great weather. They have a beautiful new house. Kendie got to see her boyfriend Wy. I got a little teary eyed when we first got there, They practically knocked each other down they were hugging so hard. They missed each other.

Chicken Florentine

I got this recipe form Paula Deen. Delicious!!


Chicken Florentine

2 (10-ounce) packages frozen chopped spinach
6 chicken breast halves (about 4 pounds), cooked, boned, and shredded
2 (10 3/4-ounce) cans condensed cream of mushroom soup
1 cup mayonnaise
1 cup sour cream
2 cup grated sharp Cheddar
2 tablespoons fresh lemon juice
1 teaspoon curry powder
Salt and freshly ground black pepper
1/2 cup dry white wine
1/2 cup freshly grated Parmesan
1/2 cup soft bread crumbs
2 tablespoons butter



Remove the outer wrappers from the box of spinach. Open 1 end of each box. Microwave on full power for 2 minutes, until thawed. Drain the spinach and put into a large bowl. Add the shredded chicken.


In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the spinach and chicken. Mix well with a spatula.


Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan and bread crumbs and sprinkle over the top. Dot with the butter.


Wrap the uncooked casserole securely with plastic wrap, then with aluminum foil. Place each pan into a plastic freezer bag and seal. Place into freezer.

Allow casserole to thaw 24 hours in refrigerator. When ready to bake, remove the plastic wrap and foil. Bake uncovered at 350 degrees F for about 30 minutes until bubbly.

The Wedding

On Saturday my cousin got married. Ken and Reagan were the flower girls. They did a great job! Except when it was time to pray and Kendall noticed Rea-girl had some gum and she didn't. Luckily, all it took was Omie telling her she would get some if she would just go back up and be a good girl. Right after the ceremony the sun came out and it was a beautiful warm day( it has been raining and struggling to get out of the 50's here). Did I mention the wedding was out side?

They had a beautiful reception decorated with pictures,candles and yellow roses. It looked very natural and simple (even though I know it took a whole lot of planning);). The girls had on bright Spring like dresses and Shelia's bridesmaid, Katie had on a cute black dress. We drank margarita's and sangria and danced the night away!

My First Giveaway

Want a cute headband?

I don't know if any of you have read Joy's Hope. She has a amazing blog, stories of motherhood to living next door to Tamera. You know the one on Real Housewives of OC. Really good blog you should read it if you haven't already.

About a month ago she had a post about a little girl Cora, who lost her battle with cancer. Oh, it just broke my heart reading their story. Julie has raised more than $15,000 by selling headbands for Cora's playground. Now it's $15,014.00 because I just bought one for Kendall.




Of course I had to get a Hot Pink Zebra one. Go on over there and get you one!:)

Chocolate Chip Muffins

One of my sister in laws is a registered dietitian. I love to pick her brain about what she feeds her family for breakfast, lunch and dinner. Which is mainly organic, natural foods. I am trying to slowly ween my family (mainly myself) off of processed foods. I have been searching for good wholesome recipes. This one uses vegan chocolate chips(where the heck do you buy vegan chocolate chips?) but I just used regular ones.



Chocolate Chip Muffins

1 cup unsweetened applesauce
1/2 cup raw sugar
1 tsp vanilla
1/4 tsp. almond extract
3/4 cup oat flour
1/3 cup cocoa powder
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup semisweet vegan choc chips
1 dash cinnamon

using 3 oz. ice cream scoop, evenly scoop into muffin tins and bake for 20 min to an hour. rotating half way through. place toothpick in center. when toothpick comes out clean, muffins are done. allow to fully cool then pop out with a spoon

makes 8 muffins
