4th of July Dessert

I saw this on Family Fun and thought it was so cute! Perfect for the 4th of July!



1 Wafer ice cream cone
White frosting
Blue fruit leather
Red and blue decorating gels
Red and blue M&M's
Canister of ready-made whipped cream

1. Place a scoop of vanilla ice cream on a plate and return it to the freezer to harden. Meanwhile, construct an Uncle Sam hat out of a wafer ice cream cone.

2. Use frosting to attach a blue band of fruit leather around the bottom of the cone. Squirt vertical stripes of red decorating gel down the sides and blue gel on the top.

3. Using a star tip, squirt on white frosting stars around the blue fruit leather, if desired. TIP: To avoid smudging the Uncle Sam hat design, have your child hold the cone from the inside while decorating it with fruit leather and icing.

4. Remove the ice cream-scoop "head" from the freezer and top with the Uncle Sam hat. Working quickly so the ice cream doesn't melt, add blue M&M's eyes and a red M&M's nose. Finally, add a whipped cream beard. To do this, have your child hold the canister upside down while squirting on a long white beard.

5. Serve up your Uncle Sam ice cream cone immediately. Makes 1.

Look who joined the...


J, Ken and myself joined the Y. Lots of fun stuff for the kids to do. Ken loves going to the "gym" that's what she calls the child care. I thought this would be a good family thing we can do, J and I workout and than get Ken and go to the pool and swim a while. The only thing is we are so darn tired after working out we can't find the energy to go to the pool.:) Hopefully this will change soon.


Last week I lost 4lbs. Here is my very public plan to attack the fat!

We want to have another baby so I want to lose 40 or 50lbs before I get preggers. Yes, I want to loss weight BEFORE I get pregnant. I want to be healthy for myself and for the not too far off Goebel baby. So far I've done 45 minutes of very intense (intense for me) cardio everyday. My goal is to work out for at least 1 hour.

Right below my blog list I have my weight loss results week by week. Sorry, I've been slacking on my original idea. This will be better since I don't have to write a post about it just put down some number and be done. I always feel like I have to be funny (which I think that post is pretty darn hilarious) for some reason when I talk about being fat. So I hope you join me in my journey to get the junk out of my trunk!

Strawberry Lemonade

It is so hot here! I told J yesterday I wish Summer was over and he said, "You know it hasn't even started yet, right"? Thanks buddy for the reminder!

Hopefully some of this will keep me cool until mid October.:)



Strawberry Lemonade


1 (12 fluid ounce) can frozen lemonade concentrate, thawed
4 1/2 cups water
1 (10 ounce) package frozen strawberries, partially thawed


In a large pitcher, mix together lemonade concentrate and water. Stir in strawberries.


I usually put my leftover strawberries in the freezer and use them as ice cubes.

Folk Life Festival

Last night we went to the Folk Life Festival. This is one of events we have to go to for Wurstfest. Folk Life is usually really fun but I knew when the weather man said the heat index was going to be 105 it was going to be brutal.


Everyone rides the bus from NB to the festival and it wouldn't be a Wurstfest function with out coolers full of beer. That always makes for a interesting ride back home...lots of singing going on.:)




We are waiting on the buses to get there. I really need to take my sunglasses off when I'm out in the sun. Can you say raccoon eyes?




Kendie isn't the only one who got a sassy new Summer do. Can you tell I'm already miserable?



My FIL and J. I really can't tell you who I think is cuter J or his dad.;)

Did I mention, we had to wear our dirndls? Those poor boys and their suede lederhosen...they don't look so happy.

Favorite Friday




I love to look at this blog! She has the best ideas. As some of you know I really do like to have parties! I start brain storming about Kendie's birthday party about 6 months before it happens. I like to think of or find unique themes. I know my time is running out until I have absolutely NO say so in birthdays, so I'm making the most of the time I have!:)

Portabella Sandwich

I have a confession to make. Last night was the first night I cooked supper in almost 2 weeks. This is what I made...

Portabella Sandwich

4 cleaned portabella mushrooms
1 ounce balsamic vinegar
1 ounce extra virgin olive oil
2 tablespoons butter
1/2 ounce garlic, fresh, chopped
1/2 teaspoon salt
1/8 teaspoon pepper
1 pinch basil
mayonnaise
ciabatta rolls

Saute the mushrooms and garlic in the butter and olive oil until the mushrooms are tender( about 10 minutes) pour in the balsamic vinegar, salt and pepper and reduce to low heat.

I chopped up some basil from our garden (just because we have it) and stirred it in the mayonnaise and put it on the rolls.

I also grilled some squash and zucchini. Tossed them with some olive oil, salt and pepper put them on the grill for about 20 minutes. It was a nice Summer side dish.


**You can also grill the mushrooms. When I went to the store they were all out of whole portabella's so I had to get the ones pre chopped...not so good on the grill.**

Off to the Beach




Today, we are heading to the beach. We've been wanting to go for a while.

Right now, I'm sitting in my chair all covered in banana boat tanning oil, watching my sweet husband and my baby girl digging a hole. Yes, you read that right, a hole. The Goebel's don't build sandcastles. When we come to the coast, we dig deep deep holes.

Team Rachel

For the month of June, half of what I sell at Ruffles and Rhinestones will go to Rachel's, Relay for Life team.

Rachel is a little 2 year old girl who was diagnosed with a spinal cord tumor called PNET in December of 2007.

I am so excited about this! I told Amy it might not be a lot but every little bit helps. The money will go to groups like the Cancer Society who sponsor research for new cures.
