Bring on the Rain....

Yesterday as I was on my way home and drove around our little quaint plaza (aka the circle or the square) in town I noticed lots of people. News vans, people standing on the side of the rode (with their hats off) and I was wondering what are they doing?

They were praying for rain. Which we need desperately!

Here are some pictures of the river that is near my parents house.










See that arrow? That is a little camp house, we have parties in there. In the flood of 2001 the the water was in it. It's up a big hill a REALLY big hill, oh, I use to dread walking up that thing when I was little. All sunburned from being down there all day and than you had to walk up that monster.

Welcoming Home a Hero - Fallen Marine

Marine Lance Corporal Brandon Lara lost his life in the line of duty while serving his country in Iraq. Lara was flown into the Randolph Air Force Base where he was escorted off base, through Universal City, Schertz and to New Braunfels. This video is of the procession from the air force base to New Braunfels. Hundreds of people lined the streets to pay their respects to this fallen hero.

Homemade Pimiento Cheese Spread

If you live in the south you can always use a good recipe for pimiento cheese.



Homemade Pimiento Cheese Spread~

1/2 cup mayonnaise

1 4-oz. jar diced pimiento, drained

1 teaspoon Worcestershire sauce

1 8-oz. block extra-sharp Cheddar cheese, shredded

1 8-oz. block sharp Cheddar cheese, shredded

1/2 cup pickled jalapeno pepper slices, drained and chopped.

Combine first 3 ingredients in a large bowl; stir in cheeses. Stir in chopped pepper. Yield: about 4 cups.

Note: To blend in the shredded cheeses more easily. first let them sit at room temperature for 20 to 30 minutes to soften.

Dora, Dora, Dora the Explorer...

On Saturday, my sister and I took the girls to see Dora. So when we got there (a little late) and we were looking for our seats (thank goodness Dora is not punctual) and I saw this sign on stage....



I became VERY excited! I would say I was more excited than my little Kendie Sue! I was that mom. Singing every song they sang. The kids and the mom's had a great time!

Even a surprise visit from Diego

The Wedding Dress....

Kelly's Korner is doing "Show Us Your Wedding Dress" this week. We got married in April of 2004. I wanted to get married in the Spring time just like on Steel Magnolias...I know kind of dorky but I love that movie and I love Spring time!



I loved my dress! On the hanger I would have never thought this would be the one but when I put it on it just sang to me! I bought it at Celebrations in Texas. It was not too over the top, just some beading on the chest. On the stomach the fabric swept to the side so that was VERY flattering!:) I didn't have a long train and I absolutely loved my veil. It also came with a little matching purse, which I KNOW Kendall will use at her wedding...right?

Almost...

Busted it at the gym trying really hard to take a good long look at this fella....



He was on some sports channel talking about what ever sport he plays.:) I was so into looking at him I forgot I was on a treadmill. Ipod fell, I ALMOST took a spill and as everyone was looking at me, I looked behind me like, what the heck just happened? Did someone come out from under this thing and grab my leg? Funny now, not funny then.

Strawberry Shortcake

I made Strawberry Shortcakes (Southern Living recipe) on Sunday when we went over to our friends, Chet and Heather's house for dinner. I never made them before so I was a little worried that they would not turn out but they were SO yummy!

To be honest, I don't think I have ever had strawberry shortcake until last week. We went over to another friends house for dinner( I guess we need to invite people over to our house sometime soon) and she made them but with grands biscuits (with a little sugar on top) and vanilla ice cream. Oh, heaven!!

So I thought I'd try the real deal. It was worth the work! Spent a little extra time at the gym today because of it!:)

Strawberry Shortcake

2 (16-oz.) containers fresh strawberries, quartered
3/4 cup sugar, divided
1 cup whipping cream
2 tablespoons sugar
2 3/4 cups all-purpose flour
4 teaspoons baking powder
3/4 cup cold butter, cut up
2 large eggs, lightly beaten
1 (8-oz.) container sour cream
1 teaspoon vanilla extract



Combine strawberries, 1/2 cup sugar, and, if desired, almond extract. Cover berry mixture, and let stand 2 hours.

Beat whipping cream at medium speed with an electric mixer until foamy; gradually add 2 Tbsp. sugar, beating until soft peaks form. Cover and chill up to 2 hours.

Combine flour, remaining 1/4 cup sugar, and baking powder in a large bowl; cut butter into flour mixture with a pastry blender or two forks until crumbly.

Whisk together eggs, sour cream, and vanilla until blended; add to flour mixture, stirring just until dry ingredients are moistened. Drop dough by lightly greased 1/3 cupfuls onto a lightly greased baking sheet. (Coat cup with vegetable cooking spray after each drop.)

Bake at 450° for 12 to 15 minutes or until golden.

Split shortcakes in half horizontally. Spoon about 1/2 cup berry mixture onto each shortcake bottom; top each with a rounded Tbsp. chilled whipped cream, and cover with tops. Serve with remaining whipped cream. Garnish, if desired.

It was a good day...

Yesterday was a fun day for me. My cousin came over and helped redo my Ruffles and Rhinestones blog.

I wanted something simple and easier to read/navigate. I LOVE the way it turned out! It's so pretty with all the colors. She brought her awesome camera with her to take pictures. I think I'm going to ask Santa for one of those babies this year. The pictures turned out awesome!

Here are some of the pictures and the etsy banner she made me. I'm going for a new look with pink and turquoise and I love the damask print, It's actually some fabric I have. I'm getting some business cards printed up with that print in the background. And I am in love with that font!



Instead of using pictures of my actual jewelry and bags. She decided to use some of the materials that I have. My embroidery thread, some cute fabric and some of my beads. It turned out perfect! Not only did she do all this for me, she also brought us some homemade bread. If you want her to make you a banner I think this service is a little extra.:)


We finished up by going to one of my favorite restaurants, Huisache and having a great late lunch. It was a good day.

Fun on the 4th...

We had a great 4th of July weekend. Filled with family and friends! A parade in the morning, a little dip in the pool, a beautiful wedding that evening and than off to the park for the fireworks.







It was a busy weekend. Jeff's cousins came into town and one of them stayed with us for the weekend with her little boy. On Sunday we went over to Jeff's parents for breakfast and than off to J's brother's house for steaks and swimming. We all had so much fun with all her cousins this weekend. She slept until 11:30 on Monday morning.



Look at all those cousins! Kendall actually jumped off that bridge. Usually it takes her a little bit to jump off the side, let alone a bridge like that. Those 3 girls are the ONLY granddaughters in the family! I hope you had a great weekend! Now, I'm off to tackle that pile of laundry that has been on our floor since Saturday.
