Homemade Granola

3 cups rolled oats
1 cup slivered almonds
1 cup sunflower seeds (shelled)
3/4 cup shredded sweet coconut
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/4 cup plus 2 tablespoons maple syrup
1/4 cup canola oil
3/4 teaspoon salt
1 cup raisins


Preheat oven to 250 degrees F.
Line 2 cookie sheets with parchment paper or silcone baking mats.
In a large bowl, combine the oats, nuts, coconut, cinnamon and brown sugar.
In a separate bowl, combine maple syrup, oil, and salt.
Combine both mixtures and pour onto the 2 cookie sheets.
Spread evenly, and bake for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.
Remove from oven and transfer into a large bowl.
Add raisins and mix until evenly distributed.


Will keep in an air tight container for 2 weeks.

Only in Texas

On Sunday it was almost 80 degrees. We went over to our friends house for a cook out. This was Kendie and her little friend Hudson in the hot tub. Tomorrow, we have a chance of snow. Only in Texas.

Tomato Basil Pizza

Look what I got today



Okay seriously, I want to be her...in a non stalker way, of course.


This is what we will be having for dinner tonight




Since I had all the ingredients, expect the fresh mozzarella. I had to run up to the store and get some. I have never used fresh mozzarella before and to tell you the truth I'm kind of excited.


The pictures in this book are amazing and I can't wait to try out all of the recipes. I don't know why I waited so long to get the book.

Rodeo and Rain Boots...

Our Valentine's weekend was a fun family occasion. Saturday we went out to the rodeo...

Karagen and Kendall's boots. Reagan's rain boots...love that free spirited girl!






Then on Sunday it was a nice breakfast made by Kendall and Jeff and opening our handmade cards...




Jeff and I have made cards for each other since we were dating. I told Jeff that he didn't have to get me anything (which most years he doesn't:)) just take me on a mini vacation for our anniversary in April.

It's raining, It's pouring...

This is what it looks like out my kitchen window...



It is so rainy and gloomy here.We have baked our little hearts out today. We made some homemade bread...



Since I got a bread machine for Christmas I don't think I have bought a loaf since. I tried baking it in the oven today. I'm not a big fan of the huge loaves you get from the machine. But still just as tasty!

Than we are having a little Valentine's party tomorrow so we had to make some treats.



Here is the recipe. We left out the chocolate. Kendall had her little V-day party yesterday at school, I think she is still high on the sugar! And plus if there is chocolate in this house I will eat it.:)

Peace!

One of the things I wanted to do more of this year was crafts. Now, I make lots of stuff for people that pay me but I want to make good ole fashion, sit on the floor and make a mess and if you mess it up it's not the end of the world kind of crafts. So the other day that's what I did.

My niece Karagen, has her room decorated in zebra and peace signs. So, I decided to make her a sign for her new room.

First I took a piece of wood ( I got it at Hobby Lobby for something and never used it) and painted it hot pink.



Than I cut out some letters. Now, I did this on my embroidery machine but you can do it by printing out the size letter that you want and pinning it to the fabric and cutting it like that.




Grab yourself some of this awesome stuff...




Spray it on the letter and than put it on the wood. Let it dry for a hour or so and than you have yourself one of these...

Zucchini Pancakes

Did anyone see this Oprah? I DVRed it so I just watched it the other day. It was so interesting to me to see how our meat/poultry really comes to us. And Robert Kenner's tips on eating better...only eat what a 3rd grader can pronounce. Basic tips but it really makes since. Now, don't get me wrong I'm still a beef kind of girl now just a grass fed beef kind of girl.;)

I'm excited to go to our farmers market when it gets a little warmer and see what goodies I can find. And I can't wait to start working in our big garden and plant some zucchini and make some of these...


Zucchini Pancakes

2 medium zucchini (about 3/4 pound)
2 tablespoons grated red onion
2 extra-large eggs, lightly beaten
6 to 8 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Unsalted butter and vegetable oil
Directions
Preheat the oven to 300 degrees F.

Grate the zucchini into a bowl using the large grating side of a box grater. Immediately stir in the onion and eggs. Stir in 6 tablespoons of the flour, the baking powder, salt, and pepper. (If the batter gets too thin from the liquid in the zucchini, add the remaining 2 tablespoons of flour.)

Heat a large (10 to 12-inch) saute pan over medium heat and melt 1/2 tablespoon butter and 1/2 tablespoon oil together in the pan. When the butter is hot but not smoking, lower the heat to medium-low and drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Place the pancakes on a sheet pan and keep warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil to the pan, and continue to fry the pancakes until all the batter is used. The pancakes can stay warm in the oven for up to 30 minutes. Serve hot.

Rodeo

On Friday night our friends came into town and went to the rodeo with us. We always have such a good time with them. The entertainment was Lady Antebellum...which I just love. Those 3 look much skinnier in person than they do on TV.
