Big Old Omies...

This April my sweet grandmother passed away. When Karagen (my oldest niece) was born my Omie was named Big Old Omie. Now, don't go thinking how mean we are to be calling our grandma old, she liked it...she really did. Her mother was Big Omie so that's what she wanted to be called by the great grand kids. Karagen just added the old part.

This week we are moving over to her farm. We are excited! This is the house my dad and his brother's were raised in, so there is a lot of history here. My cousins and I have talked about what should stay and what should go. The domino's on top of the shelf by the back door are staying. It's an old farm house. The original structure was built in 1890. So it needs some work. Hopefully, I will make my Omie proud by adding our touches to the house.



There is a huge garden area that I can't wait to get my hands dirty in. My Opie has a smoke house in the back so Jeff is excited about that. I have found myself sitting out by the garage in the same chair she did just watching Kendie play. Just like she did with us. We have had so many great memories in this house and I can't wait to make more.

I will be posting all my projects big and small as they come along.

Back from the Beach

We are back home. This afternoon as I was sitting on the couch I was day dreaming about sitting on the beach in my nice blue chair, the waves crashing into my legs. Than I realized that I had to pay some bills so it's back to reality.

It's five o'clock somewhere...

It's Beach Time



Heading out for the beach today! Going to relax and soak up the sun because when we get back it's moving time for us. We are moving over to my Grandmother's farm...more on that later.

Mini Macaroni Pies

I haven't put a recipe on here in forever! But this is a good one. Got this one from Paula Deen...you know it's good!


Mini Macaroni Pies


1 1/2 cups crushed ritz crackers (about 35 crackers)
2 cups grated Cheddar, divided
4 tablespoons (1/2 stick) unsalted butter, melted, plus 2 tablespoons cold unsalted butter, cut into pieces
4 cups cooked elbow macaroni (about 8 ounces uncooked), drained and kept hot
2 large eggs, beaten
1/2 cup milk
1/4 cup sour cream
1/4 teaspoon salt
Directions
Preheat the oven to 350 degrees F. Lightly grease 8 cups of a 12-cup muffin pan.

In a bowl, combine the crackers, 1 cup of the Cheddar and the melted butter. Divide the mixture among the prepared muffin cups and press firmly into the bottom and up the sides.

In a large bowl, mix the macaroni with 1/2 cup of the Cheddar. In a small bowl, combine the eggs, milk, sour cream, cold butter pieces, and salt. Stir the milk mixture into the macaroni.

Spoon 2 tablespoons of the macaroni mixture into each cracker crust and top with the remaining Cheddar. Bake until the cheese is browned and slightly crispy, about 25 minutes. Allow the pies to cool slightly before unmolding and serving warm.

Flood 2010

On Tuesday night we had some pretty bad storms roll through our town. We took a drive on Wednesday afternoon to look at all the damage.

The Big Dance Recital

Last weekend was Ken's big dance recital. It was so cute to see all the little girls all dressed up and SO excited to do their dance.

I think I have her convinced to do dance next year...she just likes the recital costumes.

Schools out for Summer...


This is the 1st week of Summer for us and we are going to live it up! These last couple of weeks have been crazy to say the least but it's crazy for everyone right now. We went to College Station this weekend and can you believe I have not 1 picture to show for it. This week we are going to swim and soak in Summer! I start back to school next week for our Summer session. I will get better at blogging, I promise...if I have any readers left.:)
