Insta Friday {Rockport}

This is what I was doing for the last 4 days...

The sunsets are so pretty down there. We would sit and wait for it to go down and the kids would "night swim" as they called it.







My Dad celebrated his birthday while we were there. I don't think he got to open a single present himself. Lots of little helpers.

Strawberry Lime Mojitos

This is the perfect summer time drink!



3 strawberries, trimmed and cut in half
5-6 fresh mint leaves
juice from the half of 1 lime
1 Tablespoon sugar
crushed ice
equal parts light rum, limeade and club soda (i used about 2 ounces of each)
lime wedges, mint & strawberries for garnish

Directions
Place strawberries, mint, lime juice and sugar in the bottom of glass.
Using the back of a spoon, mash together until all the ingredients are well macerated.
Add crushed iced to almost fill glass.
Top with equal parts limeade, rum and club soda.

Insta Friday

Lots of fun stuff happened this week but for some reason I only have 2 pictures.Every year on the 1st Saturday of July we have a family reunion. Filled with lots of cousins, swimming and lots of laughing.

I love our town! I have lived here my whole life. Although, it is slowly losing it's "small town" feeling. We still have parades for the fair, Christmas tree lighting downtown by the courthouse. Our 4th of July parade is great.



Other than all the fun Christmas events in our little town, the 4th of July parade is one of my favorite things to do. I usually take a picture of Kendall in front of the courthouse but this year it's getting remodeled.

Our fireworks were cancelled due to the drought. So on to plan B....



The Spazmatics, we went to go see them on Monday night. If you don't have fun at one of their concert...you can't have fun. What. A. Blast!

Red Velvet Cupcakes




Taking these bad boys to our family reunion. Some mini chocolate chips would be so good, but I forgot them at the store. Here is where you can print some cute cupcake toppers. Not like mine, I can't find where I got them from. I hate it when that happens. But I found lots of cute patriotic stuff in my search.;)

* 2 1/2 cups all-purpose flour
* 1/4 cup unsweetened cocoa powder
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1 teaspoon kosher salt
* 1 cup buttermilk, shaken
* 1 tablespoon liquid red food coloring
* 1 teaspoon white vinegar
* 1 teaspoon pure vanilla extract
* 1/4 pound (1 stick) unsalted butter, at room temperature
* 1 1/2 cups sugar
* 2 extra-large eggs, at room temperature
* Red Velvet Frosting, recipe follows

Directions

Preheat the oven to 350 degrees F. Line muffin tins with paper liners.

In a small bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. In a large measuring cup, combine the buttermilk, food coloring, vinegar, and vanilla.

In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar on medium speed for 1 minute, until light. Add the eggs, one at a time, and beat until combined. With the mixer on low speed, add the dry ingredients and the wet ingredients alternately in 3 parts, beginning and ending with the dry ingredients, and mix until combined. Stir with a rubber spatula to be sure the batter is mixed.

Scoop the batter into the muffin cups with a 2 1/4-inch ice cream scoop or large spoon. Bake for 25 to 30 minutes, until a toothpick inserted in the centers comes out clean. Cool completely in the pans and frost the cupcakes with Red Velvet Frosting.
Red Velvet Frosting:

* 8 ounces cream cheese, at room temperature
* 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
* 1/2 teaspoon pure vanilla extract
* 3 1/2 cups sifted confectioners' sugar (3/4 pound)

Place the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment, and mix on medium speed just until combined. Don't whip! Add the sugar and mix until smooth.

Insta Friday

We are gearing up for a fun, family packed weekend. Hope everyone has a great 4th of July! Here is a little of our week.

We went to go see the much anticipated Cars 2.




We live in Texas...it's hot, very hot. Need I say more.
