Fat Flush Soup


Yes, that's the name of the soup. And it does make you drop the lbs. I just roasted some chicken breast in the oven and shredded them up. I just put everything in the crock pot on low for 2 hours or so and when we came home from the T ball game, it's supper time! It makes a ton. I also put in some zucchini,which was yummy!

2 tsp. Olive Oil
1/4 lbs. Lean Ground Beef, Turkey, or Shredded Chicken
1 Onion, chopped
2 cloves Garlic, chopped
1 Bell Pepper, seeded and chopped
... 8 oz. Mushrooms, chopped
1 (14oz) can Crushed Tomatoes
1 (32oz.) bottle reduced sodium tomato or vegetable Cocktail Juice
1 (14oz) can Beans rinsed and drained.
1 Tbs.Ground Cumin
1/8 tsp. cayenne, or to taste
1/4 cup each fresh Cilantro and Parsley, chopped

In a stockpot, heat Olive Oil over Medium-high setting. Saute meat/ poultry until cooked through, about 5 minutes. Drain and set aside. Saute Onions, Garlic, Peppers, and Mushrooms until soft, about 5 minutes. Stir in remaining ingredients, except Cilantro and Parsley. Cover and simmer 20 minutes. Stir in Cilantro and Parsley. Cover and simmer 10 minutes longer. Store soup in refrigerator up to 5 days. Freezes well. Makes 16 cups.

A little fall fun

We have had great weather here the last couple of days. Kendall and I took advantage of the cooler temperature and took a little day trip to Medina, where we went to Love Creek Orchards. They have a apple orchard and a fun pumpkin patch and some activities to do with the kiddos. Not only did we have a great time there the drive was just beautiful.



You can decorate a scarecrow. Ken wasn't a happy camper when we were leaving and she noticed someone stole her purse off of the scarecrow she dressed up.








They showed you how to make apple cider...which was kind of neat.




We ate the best apple ice cream. Lucky for me Ken didn't like it so I got it all to myself.

Once we had all the apples and pumpkin we could take, we drove to Bandera where we did a little shopping. Ken spotted this shop on the way in and said. "Look mom that looks like a store you would like". She was right. I liked it.

Aprons to Boots

Last weekend we had our annual fair. Kendall entered some pumpkin patch brownies and won a blue ribbon. I love that she gets excited over stuff like this. 



And then she can take her apron off and put her show boots on and get out there and show a steer, like a pro.
